Do potravin se z\u00e1m\u011brn\u011b p\u0159id\u00e1vaj\u00ed u\u0161lechtil\u00e9 mikrobi\u00e1ln\u00ed kultury, kter\u00e9 jsou vyu\u017e\u00edv\u00e1ny v potravin\u00e1\u0159sk\u00fdch technologi\u00edch pro v\u00fdrobu jogurt\u016f, kysan\u00fdch ml\u00e9\u010dn\u00fdch v\u00fdrobk\u016f, s\u00fdr\u016f, fermentovan\u00fdch sal\u00e1m\u016f, alkoholick\u00fdch n\u00e1poj\u016f, piva, v\u00edna, dro\u017ed\u00ed, octa.<br \/>\nNa druhou stranu mohou b\u00fdt v potravin\u00e1ch p\u0159\u00edtomny patogenn\u00ed, podm\u00edn\u011bn\u011b patogenn\u00ed a toxinogenn\u00ed mikroorganismy, kter\u00e9 mohou vyvol\u00e1vat z\u00e1va\u017en\u00e1 onemocn\u011bn\u00ed. D\u00e1le mohou b\u00fdt p\u0159\u00edtomny saprofytick\u00e9 mikroorganismy p\u016fsob\u00edc\u00ed ka\u017een\u00ed potravin nebo jejich metabolickou \u010dinnost\u00ed vznikaj\u00ed toxick\u00e9 metabolick\u00e9 produkty.<br \/>\nV r\u00e1mci programu se sezn\u00e1m\u00edte se z\u00e1kladn\u00edmi druhy prosp\u011b\u0161n\u00fdch i patogenn\u00edch mikroorganism\u016f, kter\u00e9 jsou sou\u010d\u00e1st\u00ed potravin. Nau\u010d\u00edte se kultivovat mikroorganismy na \u017eivn\u00fdch agarov\u00fdch p\u016fd\u00e1ch v Petriho misk\u00e1ch, sezn\u00e1m\u00edte se z\u00e1kladn\u00edmi technikami barven\u00ed mikroorganism\u016f a tak\u00e9 s n\u011bkolika mikroskopick\u00fdmi technikami (nativn\u00ed prepar\u00e1t, pozorov\u00e1n\u00ed aktivn\u00edho pohybu bakteri\u00ed ve visut\u00e9 kapce a v z\u00e1stinu).
